Tomato and Tarrogan Tart

One of my absolute favourite quick and easy mid week meals would be this gorgeous tomato and tarragon tart. So easy to make and adjust with your preference of toppings, 25 minutes in the oven and bam! dinner is served.

This recipe originates from the ever growing in favour, The Roasting Tin. Our house have adjusted and made new variations with pepper, but I often prefer the original. Not a fan of tarragon? try sprinkling with italian seasoning before baking followed by some fresh basil before serving.


Ingredients

  • 1 Packet of ready made puff pastry (pre rolled)
  • 2-3 tbsp Dijon Mustard
  • 3-4 tomatoes (add in some spare cherry toms here and there is you have spare) sliced
  • 1/2 stadard shop bought packe of fresh tarragon
  • salt and pepper
  • Olive Oil

Recipe

Pre heat oven to 200 degrees fan

Roll out pastry onto a baking tray leaving the pastrys paper underneith.

Spoon on 2-3 tbsp of dijon mustard onto your pastry, spreading across the pastry but leaving a 1 cm edge all the way around.

Layer on your tomatoes/peppers to cover the mustard

Tear ans sprinkle your tarragon across the tomatoes

Season with salt and pepper and a drizzle of olive oil

Bake for 25 mins or until golden brown.

Serve with fresh vegatables of your choice
